    I’m part of a family that enjoys cooking and eating together and I basically grew up in the kitchen. We used to go eat Sunday lunch at my grandparent’s every Sunday. My brother and myself absorbed my gran’s love for cooking and it runs through our veins so we often cook together. A couple of Sunday’s ago we magically made this Slow Roasted Pork Belly Roll (Jump to Recipe) appear in the kitchen. We paired it with Airfryer Roasted potatoes and Peas (Jump to Recipe)

    We drew inspiration for this Slow Roasted Pork Belly Roll from a recipe Gordon Ramsey had on his facebook page, the meat came out so succulent and just fell apart. If we rested it longer we would have been able to get proper slices, but the hunger was strong after inhaling the yumminess for hours. Together with the Airfryer Roasted Rosemary and Lemon Potatoes this makes a great Sunday Lunch.

    We highly recommend the Ina Paarman liquid stock for extra deliciousness.

    A succulent slow roasted pork belly roll with gravy

    Ingredients

    • Delish Braai Rub Enough to Coat the Pork Belly Roll
    • 3 Carrots
    • 1 Onion
    • 2 sachets Liquid Beef Stock from Ina Paarman Or Stock Cubes / Powder
    • 1 cube Leek Stock
    • 4 cloves Garlic Chopped
    • Rosemary
    • Oil For Frying
    • Salt & Pepper
    • 1 Pork Belly Roll
    • 1 cup White Wine Any Kind
    • 3 cups Hot Water

    Instructions

    • Rub the Pork Belly Roll with the Delish Braai Rub
    • Clean and roughly chop the carrots and onion
    • Place the roasting pan on the stove top and turn the heat on medium, add enough oil to cover the bottom of the pan
    • Fry the onions and carrots together with the rosemary and pepper to taste till onions turn clear. Add the garlic and fry for a couple of minutes.
    • Place the pork belly roll into the pan and render the fat on all the sides
    • Pour the cup of wine into the pan and boil off
    • Add the stock and warm water, make sure the stock is completely dissolved
    • Cover the pan with the foil and place in a preheated oven of 160°C for 4 hours
    • Let the meat rest before cutting, if you don't let it rest it will pull apart as ours did, we were in a bit of a rush to eat! It smelled too good
    • While the meat is resting, pour all the juices and veggies from the pan into a small saucepan and reduce till you have the desired thickness for your gravy

    Notes

    If you don't want to cook with alcohol you can replace the wine with more water or half water, half apple juice.

    Airfryer Roasted Rosemary and Lemon Potatoes

    My airfryer was the best to me from me gifts I ever got myself. It’s super convenient and I find it warms foods much tastier than a regular microwave oven. I really love making quick potato dishes in there, the bonus is you use much less fats while cooking in it.

    Airfryer Roasted Rosemary and Lemon Potatoes

    Quick and easy roasted potatoes in the airfryer.

    Cook Time 30 minutes

    Ingredients

    • 4 - 6 Potatoes Depending on how many people you're cooking for
    • 2 - 3 tbsp Butter
    • 1 tbs Oil
    • Ina Paarman Lemon & Herb Spice to taste
    • Salt to taste

    Instructions

    • Wash and dry the potatoes
    • Cut the potatoes into quarters
    • In a cup, add the butter, oil, spices and salt, put it in the microwave till the butter is melted
    • Drizzle or use a food brush to cover the potatoes in the butter mixture
    • Place the potatoes in the airfryer for 15 minutes on 180°C, after 15 minutes drizzle the rest of the butter mixture over the potatoes and set the timer for another 15 minutes

    You can extend the cooking time if you'd like crispier potatoes
