I’m back with a super easy recipe for chicken, chutney and mayo chicken baked to perfection. This recipe is probably a favourite in a lot of South African homes and may vary slightly from home to home but it’s just too good not to share! Our recipe is safely tucked away in one of my gran’s recipe binders, I am so grateful that I can page through it and remember all the good times we used to have in the kitchen. This recipe is super easy to follow and you only end up dirtying one mixing bowl and oven dish. A perfect winter evening dish or even Sunday lunch.
Chutney and Mayo Chicken
- Oven Dish
- Mixing Bowl
- Measuring Cup
- 8 Pieces Chicken Pieces
- Salt To Taste
- Pepper To Taste
- 1 Cup Boiling hot water
- 1 Cup Chutney Mrs Balls is delish!
- 1 Cup Mayonaise
- 1 Packet Brown Onion Soup
- Place the chicken pieces in an oven safe dish, sprinkle them with salt & pepper. In a mixing bowl mix together all the other ingredients. Pour over the chicken and bake at 180°C for 60 minutes, preheating the oven isn’t necessary.
Chutney & Mayo Chicken Variation
A variation on this recipe that I sometimes like making is just before placing the chicken in the oven safe dish is to lightly press the skin sides in some cake flour and then placing tiny pieces of butter on each chicken piece, just be careful not to get any sauce on top when pouring it over, the chicken skins will bake nice and crispy.
